Baked Artichoke in Brie Sauce

Makes 4 Servings

Rather than dip your artichoke leaves in a typical sauce, why not bake a creamy-crunchy brie-spiked sauce right on top and let the goodness ooze all over. Sound good?


  • Southern selects artichokes, stems and tips of artichokes cut off
  • 3 ounces Brie, rind removed, cut into chunks
  • 1/2 cup heavy cream
  • 1 egg yolk
  • 1/4 cup parmesan cheese, you will need extra for the top after cooked
  • 1 tsp fresh thyme leaves
  • 2 tsp finely crushed almonds


Add artichokes to a large pot of salted, boiling water for 10 minutes. Take them out of the water after 10 minutes and let them drain well, upside down.

Position the oven rack closest to the bottom of the oven. Preheat oven to low heat.

Add the brie to a small pot with the cream and let it melt on a low heat while constantly stirring.

When the mix is melted, turn off the heat.

Add the egg yolk, ¼ cup parmesan cheese, thyme and almond crumbs to the melted mix while continuing to stir.

Fill the artichokes with the mix ( It should cover the top as well), sprinkle more parmesan cheese and crushed almonds on top and place them bottom down in an oiled casserole dish.

Put under the broiler and let them cook for about 10 minutes, checking often, and waiting for cheese to turn into a golden crust.
