Creme de Papaya

Makes 2 Servings

INGREDIENTS:

  • 1 papaya
  • 2 scoops of vanilla ice cream
  • 1 tsp Creme de Cassis liquor
  • 2 mint leaves for garnish

Cut papaya lengthwise and remove seeds. Scoop out the pulp into the blender and add vanilla ice cream. Blend together to a smooth cream. In each serving bowl, add one teaspoon of Creme de Cassis liquor (black currant liquor).

Pour the papaya cream on top of liquor and add a few drops on top of the cream. Add a mint leaf as a final touch. It has a light, refreshing taste that is wonderfully tropical.
