Southern Specialties’ Regal Artichokes are known for their excellent taste and unique appearence. The purple highlights on our artichokes are a sign of sweetness.

Grilled Artichoke with Yogurt- Dill Dipping Sauce

Makes 4 Servings


  • 4 Artichokes
  • 1 lemon
  • Kosher Salt to taste
  • 2 tbsp olive oil
  • 1/2 cup low fat Greek Yogurt
  • 1 tsp chopped fresh dill


Bring a large pot of salted water to a boil.

Wash your artichokes under running water. Next, clip off the tips, outer leaves and the stems off of the artichokes.

In a large bowl with water, squeeze in juice from half a lemon.

Cut artichoke lengthwise through the stem, scoop out the ‘hairy’ choke and add to lemon water while trimming the remaining artichokes. The lemon water will prevent browning of the artichoke.

Cook artichokes in boiling water for about 10-15 minutes, until tender.

Drain artichokes, heat a grill pan or large skillet to medium-high heat. Brush artichokes with olive oil and season with salt and pepper to your taste. Grill with the inside of the artichoke facing down for about 5 minutes.

Meanwhile, squeeze the other half of the lemon into a small bowl. Whisk in the Greek yogurt and dill. Season with salt and pepper.

Serve the artichokes with the yogurt dipping sauce and enjoy.
