Our baby carrots are harvested and gently peeled by hand. These sweet, healthful carrots with green tops are a gourmet favorite.

Honey Roasted Carrots with Ginger & Rosemary

Makes 4 Servings

INGREDIENTS:

  • baby carrots
  • honey
  • butter
  • fresh rosemary leaves
  • fresh ginger, grated (fine)

DIRECTIONS:

Preheat oven to 450 and select baking pan.

  • Rinse carrots and lay out on baking pan in single layer.
  • Melt honey and butter together.
  • Grate (fine) ginger into honey/butter mixture.
  • Baste honey/butter /ginger on carrots.
  • Sprinkle fresh rosemary leaves over carrots.
  • Put pan in 450 oven.
  • After 10 minutes, shake pan so carrots move around a bit.
  • Return to oven for 10 minutes.
  • Remove from oven and place in serving dish.
  • Sprinkle a few more rosemary leaves on top.
  • Serve – yummy!
