Sweet and succulent peas are versatile and flavorful. Enjoy them in salads, stir fries, sautees and as snacks.

Penne with Southern Selects Sugar Snaps and Prosciutto

Makes 4 Servings


  • 12oz. Southern Selects sugar snaps
  • 1 lb. penne pasta
  • 4 oz. prosciutto or other ham
  • 1/2 pint red or yellow teardrop tomatoes (optional)
  • 1 medium red onion diced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • salt and pepper to taste
  • Grated parmesan cheese


Boil water in a large pot

Add salt to water when it starts to boil

Blanch sugar snaps in boiling water for 45 seconds and remove

Shock sugar snaps by placing them under cold running water and reserve

Bring water back to a boil and cook pasta according to directions on package


While pasta cooks, add oil and butter to a large saute pan over medium heat

Add onion and sauté until just transparent

Dice prosciutto and sauté  for one minute

Add sugar snaps


Drain pasta and stir into sugar snaps and prosciutto

Add pasta water to mixture if necessary

Top with grated Parmesan cheese

Stir, serve and enjoy!
