Enjoy the versatility of this wonderful vegetable steamed, grilled, sautéed, roasted or in soups. Green and white asparagus make the most elegant presentations on the plate.

Roasted Southern Selects Asparagus and Tomatoes with Feta Cheese

Makes 4 Servings


  • Olive Oil
  • 1 lb. Southern Selects Asparagus, trimmed
  • 1/2 cup teardrop, grape, cherry or baby heirloom tomatoes
  • 1 tsp chopped fresh thyme, or other herbs
  • 1 garlic clove, peeled and minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup Feta cheese crumbled


Preheat oven to 400 degrees
Combine all ingredients, except Feta cheese, with olive oil to
lightly coat
Spread out on a shallow baking pan
Bake 6 to 10 minutes
Transfer to a serving dish and top with Feta cheese crumbles
