Southern Selects Heirloom Tomato Panzanella Salad
- 3-4 heirloom tomatoes cut into ½ in pieces
- 2 cups arugula
- 1 red onion (julienne)
- 2 cups Ciabatta bread cup into ½ in cubes
- Fresh grated Pecorino cheese
- Salt and fresh ground black pepper to taste
- 1 cup olive oil
- ½ cup Balsamic vinegar
- 1 shallot
- ¼ cup chopped basil
- 2 TBS sugar
- Salt to taste
Combine dressing ingredients, except olive oil, in a blender. Once ingredients have been blended slowly drizzle in olive oil.
Combine salad ingredients in a bowl. Toss with the desired amount of dressing and garnish with fresh grated Pecorino cheese.
