Southern Selects Heirloom Tomato Panzanella Salad

Makes 3-4 Servings

INGREDIENTS:

  • 3-4 heirloom tomatoes cut into ½ in pieces
  • 2 cups arugula
  • 1 red onion (julienne)
  • 2 cups Ciabatta bread cup into ½ in cubes
  • Fresh grated Pecorino cheese
  • Salt and fresh ground black pepper to taste
  • Dressing:
  • 1 cup olive oil
  • ½ cup Balsamic vinegar
  • 1 shallot
  • ¼ cup chopped basil
  • 2 TBS sugar
  • Salt to taste

DIRECTIONS:

Combine dressing ingredients, except olive oil, in a blender. Once ingredients have been blended slowly drizzle in olive oil.

Combine salad ingredients in a bowl. Toss with the desired amount of dressing and garnish with fresh grated Pecorino cheese.
