Sweet and succulent peas are versatile and flavorful. Enjoy them in salads, stir fries, sautees and as snacks.

Southern Selects Sugar Snap and Orange Salad

Makes 4 Servings


  • 8 oz. Southern Selects Sugar Snap Peas
  • 1/2 cup Mandarin orange slices (drained)
  • 4 cups Salad greens (arugula, spring mix or other leafy greens)
  • 3 Tablespoons olive oil
  • 1 Tablespoon white wine vinegar
  • 1 Teaspoon brown mustard
  • Salt and pepper


Cook sugar snaps according to directions on bag until crisp tender
Plunge into ice water to cool then dry on towel
Lightly toss together sugar snaps and salad greens with dressing
Arrange on plate using orange sections as garnish

Note: Mango slices work well as an alternative to orange sections.

For dressing: Wisk together oil, vinegar and mustard Season with salt and pepper to taste
