Sweet and succulent peas are versatile and flavorful. Enjoy them in salads, stir fries, sautees and as snacks.
Southern Selects Sugar Snap Peas Penne Pasta and Smoked Salmon
- 1lb. Penne Pasta
- 3/4 lb. Southern Selects Sugar Snap Peas (halved diagonally)
- 2/3 cup Heavy Cream
- 1/2 lb. Smoked Salmon
- 3 tbs. chopped fresh dill
- 1/4 cup grated Parmesan cheese
- Salt and Pepper
Cook pasta in a large pot of boiling salted water for 9 minutes then add sugar snap peas and continue cooking for 2 minutes more. Reserve ¼ cup cooking water. Drain pasta and sugar snap peas in a colander and return to pot.
Boil cream in a 1qt. heavy saucepan, uncovered, for 2 minutes. Add to the pasta and sugar snap peas along with the salmon, dill, reserved cooking water, salt and pepper (to taste). Toss to combine. Add grated cheese and toss again.
This dish is very versatile. The sweet sugar snap peas complement the smoky/salt flavor of the salmon beautifully. Try this dish substituting diced, grilled chicken and tarragon for the smoked salmon and dill.
Smaller portions of this dish make for an excellent appetizer, as well.
